is there a place where I can highten my flying skill?

Well you could go to the airport and spawn a plane and practice flying around the first city you begin in. If you get bored there? There is an island North of the original beginning point which has a very large mountain. If you find spots you like put a player location on it. You can do it by pressing pause and looking at the map marking the location so you can revisit it anytime. (:

There is a simple map of San Andreas but for the most fun I suggest going North-East and Central. Lots of barren land between the city and plenty of area to practice without interference.

How far are you? I'd say just go to the air strip you get and fly the planes there, though if you're still doing the missions I don't think you can just take the plane.

I wouldn't bother practicising flying planes until you've done the learning to fly mission series, as that increases your flying skill anyway. Then I'd just fly randomly around the coast, as then there are no tall buildings to crash into.
