To modify the size of an image you would have to do so in something like Photoshop and then resave it and rehost it. You don't have to use the new link for the sig though because as long as you rehost it under the same name it should follow through into the sig. If you resave it under a different name, then you would have to use the new name for the sig.
To modify text, you could just type in the font size.
