Help me with Chocobos!

I need help! I can't find answers to this stuff in any FAQs anywhere, so maybe you all can help me.

1) What do they do in combat? They have cool abilities and stuff, but what does it mean when my characters ride them?
2) What do they do differently based on color?
3) They keep breeding! What am I supposed to do!?

Yellow Chocobo: Choco Attack, Choco Cure, Choco Esuna (with monster skill)
Black Chocobo: Choco Attack, Choco Ball, Choco Esuna, Choco Meteor (with monster skill)
Red Chocobo: Choco Attack, Choco Ball, Choco Meteor, Choco Cure (with monster skill)

Riding disables the chocobo's ability to attack, but gives the character riding it the chocobo's maneuverability. The best chocobo to ride are black chocobo because they can fly.
