Final Fantasy Star-field thing after you beat the game

I was wondering about that star-field in Final Fantasy VII after you beat the game and stuff like that, on what the whole purpose of it is, and if there's anyway to get past it to play a new game and all if its possible to have all the items/weapons you had before...

There is no New Game + option in Final Fantasy VII, the star screen is a Final Fantasy Fin trademark.

I'm sure it's after the star screen that you see the final part of the ending with Red XIII, but you have to wait for at least five minutes. Either way, the only Final Fantasy there is a New Game + option in is Final Fantasy X-2.
