But at that time,Cloud suddenly called 'mother' and Aerith complaint that this was how many times she heard him called mother AND later Cloud said,'This means I respect you.'

"You" called me mother? I thought she was just complaining about being called mom in general. 'Cause Kadaj called her mother when he died. I think Cloud was just being delusional. Probably wrapped up in Kadaj's quest for HIS mom it was just on his mind at the time. But that's the only time I recall Cloud calling her mother too.
Cloud was probably in a mental state akin to being drugged. That can happen when you suddenly get shot.
In game Cloud did not actually called Aeris mother. But there was a scene in the game wherein Cloud remembered his mother in Aeris' house. Cloud fell after the explosion of the sector 5 reactor and Aeris found him in the church.
