I don't see how you can force someone to keep a theme that has been made for them anymore than they can force somone to make it for them. I really don't see the problem here. If you can see that someone is not going to appreciate your work and you see them requesting work on a regular basis, don't do work for them. People will take advantage of you only if you allow them to. Guidelines for this are not necessary, just good judgement.
