The fact that you can raise their stats to max easily (with lots of gill), makes them the best.

Max Stats aren't as important as they sound. And Blue Mages can make your entire team all but invincible, if you know how to use them right. They are definitely the better job.

how do you max out their stats?
Spend Cure Alls on them, costs alot but money comes easy in FFTA.

The stats of a morpher change depending on the stats of the monster they are morphed into. By giving curealls (or Elixirs, for Malboros) to the monsters in the monster banks, you can eventually raise the stats of the monsters in the bank to max, and then the Morpher's stats will be raised when they morph into the monster.
Of course, that is somewhat simplified, as several stats aren't affected by that, but...
