Vincent's "vampirosity" is spread by internet roleplayers, so don't believe 'em. The coffin is the only tie to him and that image, if you ask me.

My theory is that the experimentation stopped him aging, and because he was upset at letting Hojo experiemnt on Lucrecia he locked himself in the coffin as his 'punishment'.

That's fact, actually. Thanks to DoC, a lot more information about Vincent is known and/or confirmed. He cannot age, and he chose to take on this 'sleep' as his punishment. Hojo experimented on him quite heavily before this.
