Because they show a progression of both storyline quality and graphical technology, as opposed to a progression of graphical technology and a regression of story quality. And that they're genuinely good games. I, too, did not like FFI for it's lack of story and FFII for it's system, which irritated me. Consequently I dislike FFVIII for much the same reason (discounting Rinoa, of course).
