What does using the Grimoires LD, LT, and LL do to Zeromus EG?

Well, they all do some sort of weird glitch, the most common I've experienced are turning ZEG into a toad, paralyzing him, casting spell animations with no effect, and making him take 9999 damage at intervals for no apparent reason, and then turning him back to normal.

And, they all don't show the summon animation. Just mess him up. At least, for me.

What monster only drops one item, a megalixir? (That I know of; GBA version.)

Blue Dragon and Zeromus (blue hairy version vs Golbez & FuSoYa)

If by all elements you meant only Fire, Ice and Lightning, the Chimera family would add up (Chimera, Chimera Brain, Chimerageist), and Zeromus (blue hairy version vs the party, also absorbs Holy).

Q. What summons do the party not fight against their lunar counterpart? (GBA)

Chocobo, Sylph, Goblin, Mindflayer, Bomb, and Cocatrice.

Also Zyrthofar when I said absorbs all elements I mean Fire, Ice, Lightning, Throw, Holy, and Dark. It's only in the GBA Version.

I'll give out another hint. It gives 65000 Exp and Gil if you manage to defeat it.

Then, I guess it would be Brachioraidos (but I think Blue Dragon still absorbs everything, unless I'm mistaken).

If I remember correctly the Blue Dragon doesn't absorb darkness and thrown weapons.
