I have to admit, that I understand little of the emotional aspect, so that just leaves the biological aspect, and the baser aspect based around pleasure. I guess I just don't know what I'm talking about then.

Symbol isn't always the right word. More so giving something meaning. Just like you don't kiss every person you come across in the street just because you feel like it. You only kiss the ones you actually care about - it's a sign of love or lust. But is it really important in any way if you take away it's meaning? No, it's planting lips on some other person's body, nothing more.People have trophies, people have letters, people have sentimental value. They have framed photos. All of these things are down to emotion. To deny emotional attachment to things is to deny humanity.
