I seriously doubt a little cat creature would be difficult for Square to animate.

I guess the Mog would take up too much space? I dunno. I do know that Kitten Sith would kick ass if he had it with him though!
Cait Sith himself is, he rides on Red's back, but his actual stuffed mog, i haven't seen it, it may be hid away, like something you really have to look for to notice!
The overstuffed Mog didn't look like it was very mobile throughout the game. I guess it was decided that it would be easier to have Red XIII jump around the ruins of Midgar fighting Bahamut with Cait Sith on his back instead of making a huge moogle toy do the same thing.
