    Default Holy, Water and Wind/Aero

Probably already been asked, i know that it is impossible to get these as materia, but why are there wind, holy and water elements if all there is, is: leviathan, aqualung, Alexander, Chocomog and typhoon (probably missed some)

I know some enemies use aero 2 and 3 and a handful of bosses have water attacks but thats it

The simplest explanation is that they are leftover/reminiscent of the older games. There are also some armors that null/absorb/halven the damage from these attacks.

They are unique attacks, being the only elements that the attacks are carrying, but they don't really change the dynamic of the game.

Considering how FF7 operates in it's battle system, the inclusion of any element period is utterly superfluous. Though saying that in the past some FF's didn't even use their respective elements at all.
