I'll list the few that I know.
Final Fantasy X
Final Fantasy X-2
Kingdom Hearts 1 and 2
Dragon Quest VIII
Maga Carta: Tears Of Blood
Grandia III
Add to that:
Star Ocean: TTEOT
Shadow Hearts Series
Suikoden Series (I don't like it, but most do)
Xenosaga Series
Radiata Stories
La Pucelle Tactics (if you can get your hands on it of course)
The Shin Megami Tensei series
Granted I don't love all of these games, most people do and most of these games are very popular.
Grandia III
Dark Cloud 2
Suikoden V
FFX
Theres a few decent ones you should look into.
Definately Xenosaga, Wild Arms 4 is plain awsome, 3 is quite good as well.
stay away from Breath of Fire Dragon Quarter though, that game bothered me.
Phantom brave is cool as well. I've also heard good things about Digaia, or however you spell it. SInce I'm to lazy i'll just request a moderater to fix the spelling for me.
PS2.
Dragon Quest VIII.
Dark Cloud 2.
PS1/PS2.
Final Fantasy VI.
Final Fantasy VII.
Final Fantasy IX.
PS2? Well:
Shadow Hearts 1 & 2
Final Fantasy X & X2
Kingdom Hearts
Magna Carta: Tears Of Blood
Dragon Quest VIII
Legend of Legaia 2
Grandia 2
Tales of Legendia
Vaan - "Hey, you!"
Penelo - "Yeah, you! The one reading this sig at this very moment!"
Vaan - "Interested in playing FFXII International Zodiac Job system?"
Ashe - "But you have no knowledge of the Japanese language?"
Fran - "....We could help...."
Balthier - "That's right, Fran! Just click on Crossblades' thread on the very bottom of this signature and it will show you all license grid translations, magicks and tecks locations, and other changes that were made!"
Basch - "Don't forget though. Swap Magic is needed to play this game if you don't own a japanese PS2."
Vaan - "Also remember that if you played the original, you'll have an easier time playing the international version. We hope you enjoy the International Zodiac Job System experience. See ya then!"

I'll add to the list:
Knights of the Old Republic (STAR WARS)
Fable (I don't like it too much, its much too easy to finish)
Umm I can't think of to many others at the moment but if I do think of them I'll tell you
KISS
I absolutely loved Shadow Hearts. Brilliant game. If you do anything, play all 3 of them. I was just introduced to the Shadow Hearts series this year, and after some considerable searching, I managed to find the original outside of ebay. I'm almost finished with it now. It doesn't feel dated in any way, and it really offers new and fresh ideas for the RPG genre. I mean, I love FF and all, but I've been feeling more and more as if the games have become contrived... Shadow Hearts renewed my appreciation and reminded me of why RPG's were my favorite genre to begin with.
Almost forgot Atelier IRis, that one was awsome. I;ve just started 2, but so far its seems it might be better.
Wild Arms is THE BEST rpg series I've ever played. I am sorry, Final Fantasy, but holy crap, I love that game. The First one is the best, but the other ones are great too.
Kingdom Hearts and Kingdom Hearts 2 when it comes out. ><
