I hated Sphere Break and Lightning dodging. I also hated giving CPR to that little girl in VII because I wanted her to die and Cloud takes forever to inhale.
Chocobo Racing in the Calm lands. The first 3 parts were easy, but the last one to get the SUn Sigil was a pain and took me a while to get.

I don't know this but as soon as I get Sun Sigil, I don't have any problem with Chocobo Race, I mean I just race them and always get 0.0.0
The summons you can get in Land of Summoned Monster is Leviathan, Sylph, Asura and Bahamut. (Once Rydia get this, she pwns)

I beat Shinra in Sphere Break on Chapter 3 on my first try, though I probably just got lucky. I didn't really play Sphere Break after that.
I just remembered one extremely hard side quest (or more like an optional item hunting) that I don't think anyone has mentioned yet. I haven't done it myself. It's getting all the Onion equipment for all the characters in FF3j.

Honestly, I didn't find winning sphere break that hard any of the times I've done it. It's not that hard a game to figure out, and with some smart playing and a little luck it's not so bad. It's still challenging mind you, but nothing like a lot of other sidequests I could think of. The one that takes the cake as the most difficult I ever attempted was the chocobo racing in FFX. Regardless of what some may claim, a large part of it is just luck in where the balloons appear and where the birds are coming from. The worst is getting hit by 3-4 birds in a row because you can't move after the first bird hits you.
There are other mini games and sidequests that probably are harder such as lightning dodging, but I've never cared enough to try them.

I've never attempted it, but I imagine getting the Excalibur II in Final Fantasy IX would be pretty difficult unless you'd played the game many, many times. Most of the other things (like the Lightning dodging) were just boring and tedious.
I don't understand Sphere Break at all even when someone explains it to me. And the girls with the jump rope in FF9 was hard and addicting.
