I hate the fact that you have to wait until near enough the end of the game before you can level up until you have all the GFs. Otherwise you're stats will get messed up & you'll be weak, which in the long run means you really aren't going to win the final battle.
Noes! The Junctioning system and magic are what makes FF8 so unique and different. If it wasn't for that, then it would be just about like any other FF. It's such a relief not having to fuss about MP and learning other magic and abilities. It gives you more time to enjoy the storyline. At the beginning of the game, the GF's abilities take awhile to learn, but once you are mobile you can just go over to Centra and fight Cactaurs. You can easily get 500 AP in just a couple minutes.

You characters will be far from weak without stat boosting if they have the proper magic junctioned. Ultimecia is perfectly easy without doing it. Stat boosting just makes her even more of a pushover. You could do the whole game without boosting, and probably even take down Omega. It just makes your characters even more badass and unstoppable. It is no where near required to beat the final bosses, though.
