Out of those options FMA. The soundtrack rocks, the characters are given surprisingly much depth, the animation is beautiful, the story has quite a few twists and turns, being both funny and tragic at times, there are cool villains, even minor characters from early episodes aren't forgotten as the series progresses, and at least the seiyū (Japanese voice actors) do a good work on portraying the characters.

It's kind of hard to choose which anime is the best, because all anime series have their pros and cons. I'm quite fond of Wolf's Rain, though, so it might take the first place if I had to choose out of the anime series I've seen.
