I don't know if it works but press R1, R2, L1, L2 when you're racing, that helps you control your chocobo.

About the dodging, if your reflex are high, then you're sure to get it but if your reflex are low (like me), go to the place where lightning bolt strikes slower. This is extremely hard, it took me 30+ tries.
