Advanced Jobs
Probably a dumb question... How do I unlock these?

Once you are 30 on a basic job you can do quests to unlock advanced jobs.

Okay, thanks. Looks like I'll a lot of leveling to do... Is there a way for me to have a subjob and a main job without unlocking adv. jobs?

Yes.
It usually goes like this: Level job to 18, do subjob quest, level subjob. Then level main job / subjob to 30 to get the quest(s) for the advance job you want to unlock.

How hard are the quests for unlocking subjob/adv. job?
Also, when I do unlock adv/subs, I want to train a Samurai at main job or sub, I'm not sure yet. What other job would go well with a SAM, DRG, or DRK? I am going to be either one of those three.

SAM = THF and WAR, and rng (only if you have the right stuff, which, no offense, is practically impossible at your current stage)
DRK = THF and WAR, and *possibly* NIN
DRG = WAR and WHM(for solo)

No, it wouldn't, only options for that would be to stun, or ballista, but otherwise you don't gain much from it that warrior can't give you.
