How...do I unlock these missions?

Well... when you beat the game, you unlock your first mission in the same place where you unlock the events scene etc. By doing the first mission, you unlock the second one, after beating the second one you unlock... I think you get it. Cait Sith's missions are in the 40 missions there is in the game.
