Gundam Wing is frecking awsome, Full Metal Alchemest was cool. Outlaw Star is AWSOME, also my personal favorite is .HACK//sign
Full metal alchemist is pretty damn good..It has twists and turns towards the middle of the story(the beginning might be kind of boring but it gets intense later on).
Cowboy bebop has a pretty high rating on animenewsnetwork, and I watched only one episode of it, didn't interest much but perhaps it might get better later on in the story.
Neon genesis evangelion is good until towards the ending, and that is when everything turns upside down (in other words, a very terrible ending)
I haven't watched much of gundam seed but heard from several people that is is probably one of the best gundam series (it's just their opinion but that might give you a clue as to whether to watch it)
Cowboy bebop would have to be the best out of the ones you picked, it's story is really fun and adventerous, the music is amazing, and they have good character development.

I recommend buying it. NOW.
At the beginning it's ok, but after about Episode 13 it gets really good. The characters really start to develop, and the ending just sort of finishes the job.
Full Metal Alchemist: I don't really like it, but the music is good.
Gundam Wing: I'm not fond of this.
Gundam Seed: I really dislike this.
Eureka 7: I haven't seen enough of it to judge.
Cowboy Bebop: I loved it.
Neon Genesis Evangelion -Really good, though the second time I watched I understood it more. Well the last few episodes at first kinda made me go WTF?

Gundam Wing -To be honest, the first time I seen this on YTV I did not like it. Then I slowly got into it (It aired at midnight, and for a while I had a hard time getting to sleep). I think I saw the end before the beginning. I enjoyed it. Probably better than FMA though they are two different genres. If you get this, you have to watch Endless Waltz which happens a year after the anime.
Gundam Seed -I have not seen this straight through to the end. But I have seen the ending and it moved me, but I am easily moved. I can't give a good opinion on it, since I did not see it all. I liked what I saw though.
Eureka 7 -I've seen part of the second episode, so I can't say anything.
Cowboy Bebop -I did not even watch all of the first episode. For some stupid reason I deleted after that. I liked the movie (I missed the last ten minutes of it T_T). So I can't judge this one either.
Cowboy Bebop should be your top priority, not eva. I love Eva and All, but Bebop is the best anime out there. Gundam seed should burn in hell, Wing was boring at first but got good the second half, and Endless Waltz, the gundam wing movie, was plain awsome. Also get the Cowboy bebop movie. that Eurika 7 show bored me, though I've only gotten a chance to watch one episode, so my opinion of it doesn't count for much right now.
Neon Genesis Evangelion - Most overrated anime ever. Gainax's other stuff, whatever it is, is better. Though I would suggest reading the Alternate Universe manga Angelic days.
Full Metal Alchemist -Worthwhile.

Gundam Seed -Needed more time to end, and less Tomino ending (or at least more casualties elsewhere in the series)
Eureka 7 -Not a bad show, though the mecha concept is ludicrous.

(SPOILER)A Japanese boy named Shu tries to save a strange girl, Lala Ru, from kidnappers and is transported to an alternate Earth on the brink of being swallowed by the sun. There he meets an American girl from his time, Sara, who was mistakenly captured because of her resemblance to Lala Ru. Shu becomes and unwilling member of the crazy and cowardly King Hamdo's army, and Sara is forced to have sex with the adult soldiers so that she can become pregnant and bear mores soldiers or slaves. Lala Ru, who can create water--a rarity in that time--using her pendant, is both a savior and a victim in a world where factions are willing to fight and die for her abilities, and at the same time keep her locked up.
Anything on Here That has a rating of 8 or above I reccomend seeing, if it was a rating of 10 why arent you watching it now?
i like almost all anime, the only anime i don't like is the old stuff. i don't like ANY old movies/serieses though. i've seen all that has been mentioned on this thread with the exception of 'Oh my Goddess,' 'Ranma 1/2,' and fate/stay night.
i recomend that yo buy it all, even the ones that you didn't mention!
If you 'like' Evangelion, then you will definitely like RahXephon.
RahXephon has been compared to and written off by Eva fanboys as an 'Eva Clone', but it definitely isn't. I'd even say it's better. It has similarities, but the overall concept is well thought out, well executed, and very very enjoyable.
Eureka 7 isn't as good as RahXephon, though it comes pretty close. (It's made by the same people.) Like RahXephon, it's not all about the 'mechs, but the characters. The characters are the best part of these shows.
