No FF intro has been as successful at introducing the game than FFVII’s introduction (although FFX-2 would probably come close). Short, sweat, and the FMV merges straight into gameplay at its conclusion.
As for ending, FFIX would probably win out due to the Iifa Tree section.

Favorite opening is VIII's (duh) and my favorite ending is IX's ending. So sweet... Yeah, that was the final push to convince me IX was the best FF for me.
Final Fantasy VIII, especially the song that goes with it. i also love the ending.

'course since FFXII came out people will be shouting how it's opening and ending and everything else was the BEST!!! Yawn.
I highly doubt it's "Star Wars/LOTR" opening isn't that great mainly because no scene in Star Wars remotely resembles any fight in LOTR.
Liberi Fatali and Squall and Seifer's gunblade duel beats whatever that scene shows.
And nothing will ever touch IX's ending. Watching how each character has so developed and come to realize who they are, feeling the satisfaction that you completed something and then topping it all off with Garnet running to Zidane to finally consoldiate their love. It's simply beautiful and artisitc to the point nothing can touch it.
FF8 and FFX's openings and FF8's ending.
FFVIII's opening and FFVIII's ending (though I've always really enjoyed the beginnings and endings to most FF games I've played) - but Liberi Fatali, the camcorder scene in the ending...all makes FFVIII's bookends fantastic.

Despite my unliking to the game, yes, Final Fantasy VIII had an epic beginning that said a fair deal about the game.
I'm going against the flow in terms of favourite ending; The long, long ending of Final Fantasy VI. I actually liked it and was intuned for every second of it. =P
I Like XII's Opening, but IX's ending the best.
