I always preferred the classic:

Fighter
Thief
White Mage
Black Mage

I simply like this party, not only in FF1 but in any RPG in general.
Therefore, I loved the first "full" party you get in FF9, because it has the thief (Zidane), the black mage (Vivi), the fighter (Steiner) and the white mage (Garnet).
