One more question, though:
do all stats gain increases, or are there only certain stats that gain increases?

The only stats that increase with level are your HP and MP. Vigor, Speed, Stamina and Magic Power will all stay at their base levels unless you equip a character with an esper that increases that statistic upon levelling up.

You can use things like Hyper Wrists and stuff but the stat boosts will be removed when the accessories are.
