maybe as an optional boss, think about it:

It is slowly walking towards you, and if you attack it head-on, it PWNS you with a butcher knife. If you cast magic, it shrugs off the pathetic amount of damage it inflicts. It's kinda like the stone-mushroom heartless from KH1 in that it isn't dangerous really, just REALLY FREAKING ANNOYING! Maybe for beating it you get a butcher knife keyblade =P

Tonberrys would also fit in well as NPC's.
