Final Fantasy V - Everyone says it has fantastic gameplay, with boring story. I enjoyed the story and the gameplay, much more then IV, and at times more then VI.
The Bouncer was a little too generic for my liking. It was indeed too rushed. I totally agree with you on FFV. It has a perfect Job system, and leveling can be a good distraction from the story, which isn't the most exciting but good to follow nonetheless.

I think one game that fits the bill is Flashback: The Quest For Identity. Although it had a sub-par sequel (Fade To Black), this game didn't receive quite the praise it deserved when it was released to the Genesis in 1993. It had revolutionary sprite movement for the time, and had a great sci-fi story with great gameplay. It'll probably always be a pure classic to me.
