I'm sure you've heard of Nobuo UematsuMotoi Sakuraba is one of my favourites too, having done stuff in Star Ocean games and most of the Tales of series, as well as others
I suppose Kajiura Yuki could count as a good one too having done Xenosaga 2 (maybe others, can't remember off the top of my head), although she's done more anime soundtracks than game stuff

Maybe try Jack Wall, Robyn Miller and Tim Larkin who have composed some incredibly fine soundtracks for the Myst series. There's also Jeremy Soule, who isn't too bad.
Perhaps you could also check out the composer for Chrono Trigger and Chrono Cross (Cross being one of the many that has inspired a lot of my work); Yasunori Mitsuda.

Also try Yasunori Mitsuda (Chrono series), Koji Kondo (Zelda, Mario, and other Nintendo franchises), Hiroki Kikuta (earlier Seiken Densetsu/Mana games), Yoko Shimomura (Kingdom Hearts series, Super Mario RPG, Legend of Mana), and Hitoshi Sakimoto (Final Fantasy Tactics and other Ivalice Alliance games).
