Cait's "death" was one of the most contrived points in the game. That said,
I'd be interesting in hearing this theoryI have a theory on why the scene is so emotional, and why Cait/Reeve mentions it being his "Final Farewell" when it isn't. It's a long shot, but a theory nonetheless.

You want to hear one of my theories? Ok (Note: to other members HE ASKED!).
I my theory is that he wasn't saying goodbye because of his own "death", (why would he, everyone knows he isn't really dying), but rather he is saying goodbye to someone else, whom he won't see again ever.
The following contains some non-Cait Sith spoilers which won't be marked so if you haven't completed the game (or at least the first disc) don't read any further.
Cait Sith is a fortune teller. However whether he can genuinely tell fortunes is presumably meant to be ambiguous. (I'm welcoming proof this isn't the case). He has already predicted one fortune, which does come true, but no one understands it (we, the players however - know what it means).
When the Demon's Gate is killed, Cait is asked to predict the future by Aeris. Specifically, whether she and Cloud will be matched up in the future. Cait predicts the future and then looks sad, and is reluctant to tell it. When Aeris says it's alright, he says that it is good news, and they will be together.
I think Reeve predicted Aeris' death, maybe not the specifics, but knows now she will die soon, and that she will disappear from the team for a short while, and this is the last time he will have to talk to her (as Cait). I realize that he makes a passing reference to Tifa, but my belief is that, that was an excuse so he didn't have to say anything - he probably assumed that either Aeris would stop asking, or Cloud would stop her from asking, as they would feel guilty about Tifa. But they didn't stop asking - so he lied.
If you watch the "Final Farewell" carefully, you'll see most of the goodbyes are directed at Aeris. Reeve (I shall say "Reeve" for the rest of the theory, because that's who is talking) first gets emotional when Aeris tells him (as Cait) to "be strong", he then comments on the fact that "There are plenty of stuffed toys around, but only one [him]" - this is because he now knows, that Aeris will soon be risking her life for the planet, just like he is doing. The only difference, is that while Reeve is sending a replaceable toy to "die" while he is safe in the Shinra Tower, Aeris is going to actually die for everyone. Something he has already failed to do. (he could have gotten the Black Materia himself, and actually given his life, but he chose not to).
So basically Reeve is not making Cait Sith say goodbye to the team, (because he is already sending another one) but rather, is himself, saying goodbye to Aeris, knowing this the last time he'll really get to say anything to her (when she dies, the rest of the team is to far away from her until she dies), that is what is meant by "The Final Farewell" - I can't describe how I felt, when all this fell into place for me.
So that is my theory guys, I realize it is a long shot, but I like it, and will believe it until proven otherwise - I realize the majority of people here don't like theories - which is why I held back my others even though most of them (such as the J = U theory) have been proven false already, despite all the "evidence*" I had collected.
*Note really evidence, but rather interesting things I found, which looked like they could back up my theory.

Yeah, he could have meant goodbye to Aeris. There is a scene afterwards where he starts to talk to himself, I can't remember what he says so it may be nothing.
I hated him even more after he told Aeris than her and Cloud are perfect for one another as I had Tifa in my party too and she just stood around looking awkward as Cait said that. "Poor Tifa" Cait Sith says, yeah poor Tifa, you big stuffed moogle a**hole!

I kind of wanted to slap Aeris for asking that question, actually, when Tifa was in my party. I felt so sorry for her.
I would like to thank those who read my theory. I am pleased you did, and am further pleased you liked it (of course it is your opinion) - I was under the impression, that you all hated theories here?

I've not scene that many thankfully. And even the ones I have, make enough sense although they're wrong.
Would people be against theories that have already been proven false but either not realized by the author, or just never posted?
Some of them might be fun to laugh at. And if they've just been retconned by Compilation releases I doubt anyone will mind too much.
