There are two known Amano drawings of Sabin with a beard.

They say a picture is worth a thousand words...how did this legendary beard come to pass? When did he grow this beard? When did he shave it? Why?

It doesn't appear in the game itself, so if he is supposed to have grown this beard, it would seem to have happened off-screen.

Sabin shaved his beard because he got nervous of the prospect of having a bootleg SNES controller when fighting Vargas that would make the Pummel move tough to input.

I suspect that in the end they wanted more contrast between Sabin and Edgar, and the beard makes Sabin look too mature and worldly. Personally I like the beard, but I understand why they went with a young, brash, and cleanshaven Sabin in the end.

Needless to say, Cid won.
Sabin lost his beard and it assimilated into Cid's, which is made up of dozens of defeated challengers' beards.

I imagine Sabin grew this beard in the two years that Celes was sleeping in the WoR. However, upon having to set out and adventure once more, he shaved his beard as a sign that he was still the youthful bear that wrestled with magic and destiny all those moons ago.

It certainly makes him look older. The cast of FFVI look far younger than they're meant to be.
