So I've finally sat around and listened to some Godspeed You! Black Emperor. It was an accident, really, because I made itunes display all the songs that had 'sting' in the tags, and one came up and I was too lazy to change tracks, and it was AMAZING.
I've only listened to five so far, but that's still 2.5 hours of music. I really liked Providence and Storm so far.
Put the exclamation point in their name right now you heathen failure :mad2:
but yeah GY!BE are an excellent band. The Dead Flag Blues is my favourite song of theirs

They actually moved the exclamation mark before their third album Yanqui UXO, so they went from being GYBE! to GY!BE.
Anyway, brilliant brilliant band, and sadly missed (they're not officially split up but to all intents and purposes they are, I don't see them recording anything again). Three great albums (though my favourite is Lift Your Skinny Fists) and the best EP ever maybe. And that ending to Yanqui UXO is magnificent and yet so frustrating, the way it cuts off so abruptly. One of my favourite bands ever.
One of the greatest bands ever, only bad thing you can say about them is that they made post-rock peak way too early.

Sleep is my favourite by them, but yeah really good band.
Though I prefer A Silver Mt. Zion, tbh.
Really incredible stuff. Lift Your Skinny Fists... is the essential post rock record, although like Ryth says, if GY!BE are your starting point then everything else might turn out to be a bit of a let down. :p

Post rock? You mean. . . there's more? :O

Explosions in the Sky is another great example. I just recently (as in yesterday) listened to GY!BE, and I'd say I like Explosions more. I've never really been that into post rock, though. I like instrumental music, but it doesn't seem to have the same impact on me that it does on some people.
There's tons of post-rock out there. One of my favourite genres.

The best thing about them, to me, was always their name.
Explosions In The Sky is great when you're just getting into post-rock, but once you get well-versed in the genre you notice EITS is nothing more a giant post-rock stereotype. They don't do anything new, but they show you everything the genre is generally about.
Recommendations:
-Spiderland by Slint (a real grower and the best in the genre, besides Skinny Fists)
-Young Team by Mogwai
-The Fall Of Math by 65daysofstatic
-Hex by Bark Psychosis
-The Four Trees by Caspian
-Ocean Songs by Dirty Three
-Those Who Tell the Truth Shall Die, Those Who Tell the Truth Shall -Live Forever by Explosions In The Sky (like I said, great for post-rock n00bs)
-All Is Violent, All Is Bright by God Is An Astronaut
-He Has Left Us Alone but Shafts of Light Sometimes Grace the Corner of Our Rooms... by A Silver Mt. Zion
-Laughing Stock by Talk Talk
-Book About My Idle Plot on Vague Anxiety by Toe.
-Millions Now Living Will Never Die by Tortoise (Djed <3)
-Enjoy Eternal Bliss by Yndi Halda
Also, a lot of people LOVE Sigur Rós. I personally don't. However, you might. I'd say they're liked Radiohead if they were a post-rock band (they're overrated enough to be their counterpart, anyway :p). Ágćtis byrjun and ( ) are their most acclaimed albums, and I agree they're their best.

Radiohead != overrated.
65daysofstatic = very yes.

I second the mentions of Slint, Mogwai, EITS, Yndi Halda, Talk Talk (try Spirit of Eden by them too) and A Silver Mount Zion. EDIT: And the below recommendations of Mono and Do Make Say Think.
But I don't second any suggestion of Radiohead being overrated - a whole other argument admittedly XD

A few other Post-rock bands that you might like:
Do Make Say Think
Russian Circles
Mono (there are several Mono bands, based in different countries. This particular Mono is Japanese and have the signiture post-rock sound)
I also second everything Ryth mentioned.

Listening to Yanqui UXO by GY!BE at the moment - Mother****er=Redeemer Part 2 is one of the most incredible tracks ever.
Do Make Say Think
Russian Circles
Mono (there are several Mono bands, based in different countries. This particular Mono is Japanese and have the signiture post-rock sound)
Russian Circles. <3
I didn't think much of DMST personally, and I've yet to listen to any Mono, though I have an album laying around.

Godspeed You! Black Emperor is my favorite post-rock band and quite nearly one of my top 10 favorite bands.
My favorite GY!BE tracks include The Dead Flag Blues (that monologue at the beginning... haunting and beautiful), Storm (love the epic drum-driven intense section in the middle, and the frighteningly sad "Cancer Towers" part), and Rockets Fall on Rocket Falls (IMO their best straight-up song, and the one that got me into them).
As for other post-rock bands that kick ass, Explosions in the Sky (not just for noobs! Ryth is perpetuating a sentiment I'm not fond of), Port-Royal (EVERYBODY who likes any kind of post-rock or electronic music, please listen to Flares), Slint, Talk Talk, Mogwai, Tortoise, A Silver Mt. Zion (early stuff), Mono, 65daysofstatic, and Russian Circles are all top picks. Though the scene in the last few years has been utterly clogged with too many clones of Mogwai, GYBE, and even EITS (who themselves are very closely inspired by Mogwai and GYBE), so it's harder to find the stand-outs these days.
