Rie Tanaka and Aya Hirano are fantastic, and so is Ayumi Hamasaki. <3333333
For J-Rock, I would have to say Dir en grey.

Momiji reminded me of another of my favourite Japanese acts: ROUND TABLE (featuring Nino). They only have 2 full albums with Nino though, wish they'd put more out.
Momiji will likely recognize them from "Let Me Be With You," the opening theme to Chobits. More recently, they've performed the opening song "Groovin' Magic" for Gunbuster 2, "Puzzle" for Welcome to the NHK, and a brand new song for 'Clamp in Wonderland' (along with Maaya Sakamoto). Their music makes me want to dance.
The only reason people like japanese music is because of watching too much anime, imho. I think it sucks.

I love Utada's new single, I finally got around to finding it.
The only knowledge I have of Japanese music is the Final Fantasy soundtracks (e.g. "Eyes on Me" and such) and "The 5.6.7.8's". So yeah, I haven't really listened to it that much.

Did I say all japanese music sounds like anime?

LOVE IT! Utada Hikaru is my FAVORITESTEST and I also love Ai Otsuka, Koda Kumi and Shanadoo, as well as video game music.
The shamisen and the koto kick the face off every other instrument on the planet, as does that weird "bok" noise that's made by those things that fill with water and then fall back and smack a stone, making that particular noise.
I also love most of Hironobu Kageyama's work on TV themes and whatnot. Choujin Sentai Jetman FTW! I never know what the hell he's singing but his voice sounds so damn cheerful that it does enough for me.
Japanese bands I really like: Boredoms, OOIOO and Mono.
