Though I would love to eat proper buffalo meat, would be pretty cool I'm imagining beef but richer.
I've had buffalo meat before. It was a lot like beef, but softer and had a slightly sweeter and more mild taste. Either way, I didn't trust it very much because the guy who hunted it was kind of skeevy, so I didn't eat any more of it after that...
I've had bison a fair bit. There's a place in Wellington that has a bison farm. And deer, and boar, and highland cow. Yeah, it's an awesome place.
