It's better to start a new character but GCD can handle existing characters, I think you just need to do a bit of console command smurfery if things don't go quite right.

What class do you like to pick? Do you go with a preset class or do you prefer to create your own?

I make my own class The skills I use the most go into Major/Minor for quick n' painless leveling. If you're going with a warrior type class you want something like Long Blade, Block, Heavy Armor... typical warrior stuff.
Acrobatics is nice as a minor because you can level it from jumping up and down a bunch of stairs for a few minutes. Likewise with Athletics because you just need to run/swim to increase it.
I am also fond of Speechcraft/Mercantile because you do a lot of trading anyway.
I always make my own class. Always. My current one is a warrior with a taste of mage, which is my usual policy - a hybrid class but with a heavy bias towards one side or another. Resto is a Major and Mysticism a Minor. The class name incidentally is "Milkdrinker".
Because I always use Galsiah's it changes the equation somewhat. Your potential stats are influenced by your starting skills, so it actually makes sense if you want to be a warrior to have more than one weapon and/or armor skill for instance. I'm not sure whether I'm going to make my next character a pure mage and go Maximum Telvanni, or a monk type with H2H, Unarmored, Acrobatics, and Athletics all as Majors.

With the fall of Dagoth Ur what became of Nevos is unknown. The last time I played Morrowind I didn't even do quests. I made a lizardman who was an axe murderer. True roleplaying. It was awesome.

Just loaded up a game using Galsiah's mod. It's great! There's no worrying or faffing with skills. You just play the game and your character improves naturally.
Having a low Agility is a right bastard, though, so I may have to do some grinding for it anyway.
I'm convinced I am never going to be able to like this game.
