It actually makes sense if you are looking for a high-protein, low-carb meal. There are a lot of recipes in a similar vein for doing bun-less burgers.
The reason the KFC double-down was an abomination was due to both pieces of chicken being heavily breaded and deep-fried, and also slathered in salt. Assuming you could handle the grease, and you were really hungry, this might not be so bad.
