Odin Sphere, easily the best. Of course I guess there isn't any technical platforming, so perhaps I should say Muramasa?
If we go old School Megaman X.
Sonic and Mario would have to be my first picks, since they introduced me to gaming in the first place. But Rayman on the PS comes to mind as well, great looking games (2D ones anyway).
Oh, and I also enjoyed Croc.. anyone else remember that lil' game. Horrible controls, but cute. And Spyro... haha, they're all coming back to me now.

Most of the Mega Man franchise comes to mind, as do the earlier Sonic and Mario titles.
Seems like most people are counting metroidvania style games. I guess they kinda are. So I will say Cave Story
Outside of that, Sonic is a shoe-in for me. I love those early games
Shovel Knight seems to be an excellent choice. I've seen so much good about that game. I need to acquire it
I'm trying to think of something outside the box though and it's kinda difficult..
Super Metroid and Yoshi's Island are probably the absolute top of my list.

Does Ape Escape count?
Mario 1-3, World, all the NSMBs, and Galaxy 1&2. (Galaxy 2 is basically the pinnacle of the platformer; I have no idea how Nintendo will ever top it.)
