No explanation required, really.
The parsnip is bigger than the carrot so I'm afraid the parsnip would crush it.
The carrot is delicious, though.
A parsnip needs to be cooked for it to reach its true potential, whereas a carrot is delicious at all times, giving it the edge.
I'm sure someone somewhere has a recipe for a parsnip cake, but the only true version is a carrot cake, further increasing its advantage as it has established itself as a viable dessert ingredient.

With how sweet a carrot is, would it not suffer at the hands of the much plainer, but similarly staple food the Parsnip? I for one do not know.
