One I haven't seen mentioned yet is Seven Deadly Sins. It does have some fanservice but for the most part it's a good action series.

Code Geass is a good mecha one. There is a touch of fanservice, but it's not horrible. Full Metal Panic! is also pretty good. Both are dubbed. Blue Exorcist is one of my favorites, but it suffers greatly from going in a separate direction of the manga halfway through the first season. Season two keeps to the manga, and pretty much ignores everything after ep 17 of the first series.
Yup. On Netflix there's also Fate Apocrypha, which might be slightly more confusing at first because it's part of the whole Fate franchise and doesn't bother explaining the setting very well, but that's also good action.
(Although the second half of Apocrypha isn't on Netflix yet)
Have you seen Samurai Champloo? If not, it's from the guy behind Cowboy Bebop, and in my opinion every inch as good. Just for slightly different reasons. But still, great use of all ingredients, comedy, drama, action, and even quite a few thoughtful episodes and stuff. And it bucks the typical anime trend of following a specific route, and opts more to be like an american cartoon, in which it doesn't specifically matter what order you watch most episodes in, but still best to watch them in order. It's just nice to have a great anime that has more of an adventure-a-day feel. Very Avatar: The Last Airbender (which if either of you haven't watched, should be a must, even if it's not "anime", I don't know many anime fans that don't find it compelling)
Oh, a bit late, but I forgot to mention: Ghost in the Shell is great.

Okay we started Attack on Titan last night.
What a weird show. Not sure I like the art style. I'm also not a fan when they zoom in on eyes and it's hyper quality. The change in art is jarring.
Dude it's the business! The art takes a major upgrade in season 2.
