I feel anything pre-PS1 doesn't need a remake (*cough cough* including FF7 *cough cough*).
FF4 is one of my favorite FF's, but I feel FF2 can really shine if it was remade w/ a more fleshed out story and characters. Guy, Gordon, and Minuw are some of my all-time faves, and I'd love to see them fleshed out a bit more. And Maria? She'd be the next FF cover waifu if she got them upgrade graphics.

FFVI man. Suplex train in real 3D graphic is the trout!
I would remake FF9 and change nothing except some of the weird CG/not CG scenes, especially the final scene at the Iifa Tree. Looks weird, yo.
Also I would improve battle load times.
