On the left of the Equipment screen you've got Speed, Strength, Magic and Spirit in one section, Attack, Defence, Evade, Magic Defence and Magic Evade in another.

What is the reward for catching 99 frogs with Quina?

The 'reward' for catching 99 frogs is a battle with Quale. If you manage to defeat him you'll get Quina's Gastro Fork. The rewards you'll collect on the way to 99 are a Silk Robe, an Elixir, a Silver Fork, a Bistro Fork and some Battle Boots.
