Almost anything by Yoko Kanno.
This includes:
Yoko Kanno is awesome. She has so many excellent songs it's hard for me to select just a few to highlight (because I would start listening to them and get sidetracked, and never finish the post). I'm listening to a tune from Wolf's Rain right now. I would watch an anime just because she worked on it. Macross Frontier, here I come.Yes it is, pretty much anything from Cowboy Bebop. Other favourites (though to a much lesser degree) are Kenji Kawai and Taku Iwasaki.
You guys need to be educated in the topic of badass opening themes.
Putting Yoko Kanno and Yuki Kajiura aside, there are some noteworthy composers. Such as Ayako Otsuka who worked on Zegapain, Masanori Sasaji who worked on Loveless and Hikaru Nanase work on Chrno Crusade. As for specific songs themselves there are a few I like:
